Not a region. A question.
Most Indian restaurants pick a coast and stay there. We cook from all of it — a Kerala prawn beside a Kashmiri lamb beside a dal that took two days — because the thing they share is not a region. It is heat, and how much of it you want.
So we ask. Every table, before anything is fired. Your answer changes six of the nine courses, and nobody at the table has to pretend.

Twenty years in other people’s kitchens before he opened a room with twenty-eight seats in it. He still comes to every table before the first course and asks the question himself — how much heat do you actually want, rather than how much you think you ought to.
The fourth course is the one he argued for. Nobody outside the northeast was putting axone on a tasting menu when he first tried, and he has long since stopped explaining it.

Everyone starts within a half hour of everyone else, which is why the kitchen can cook nine courses five different ways without anything arriving cold. It also means the room fills once and stays. Nobody is rushed out for a second seating, because there isn’t one.


One fire. One table. Whoever comes.
One night a week we light the fire in the middle of the room and lay a single table around it. The heat is set by whoever is standing over it, not by a dial — and you sit with whoever else booked. Two seats or ten; the table fills either way.

I set it to four out of bravado and they quietly brought me water without being asked. The lamb was worth it.
My mother does not eat chilli and I do. We sat at the same table and both ate the same nine courses. I have never seen that anywhere.
